OKLAHOMA CITY- Cauliflower may not be your favorite vegetable, but there’s no doubt it is good for you.

Roasted cauliflower can turn this healthy side into a treat for the whole family or serve as a main course for Meatless Monday. The spicy crust on this one gives it a great presentation to wow even the stubborn vegetable eaters. ‘Cooking with Kyle’ Anderson has just the recipe to fit the bill.

 

Recipe:

1 large head Cauliflower
1.5 C (12oz) Plain Greek Yogurt
1 Lime, zested and juiced
2 T Chili Powder
1 T Ground Cumin
1 T Garlic Powder
1 t Curry Powder
2 t salt
1 t pepper

Preheat oven to 400 degrees
Lightly oil a baking sheet

In round bowl (large enough to accommodate Cauliflower) whisk together yogurt, lime and spices.
Remove woody stem and leaves from bottom of cauliflower head: it should be able to sit “flat”

Thoroughly coat cauliflower crown with yogurt mixture; place head-down in bowl and rotate, turning and tilting as necessary. Add additional as needed using brush or hands.
Place on greased sheet pan and bake 30-45 minutes, depending on size of cauliflower.

Surface will have a slightly “dry” crust when done. Cut into wedges and serve hot.
