This is a special recipe; it is one of renowned Chef Jacques Pepin’s, modified by Chef Kyle and Chef Pepin’s longtime friend Chef John Bennett. It may be made in advance, has spectacular color and will be the “star” of your summertime gathering. Enjoy!
- 1/3 C Olive Oil
- 3 T fresh Lemon Juice
- 1 T Balsamic Vinegar
- 2 t Kosher Salt
- 1/2 t Tabasco
- 1/2 t Black Pepper
- 1 (+\-) 8 lb Seedless Watermelon, cut into 1.5″ chunks, chilled
- 2 C (roughly 1/2lb) Crumbled Feta
- 1 small, sweet Onion, coarsely chopped 1/2″ dice)
- 1 C fresh Mint, coarsely chopped
In a bowl, whisk together Lemon Juice, Balsamic Vinegar, Tabasco and Black Pepper. - Slowly add Olive Oli and continue whisking until thoroughly blended.
- Toss Watermelon in dressing
- Toss in Feta, kosher salt and mint.
- Serve chilled.
