Surprise mom on Mother’s Day with chocolate waffles with bacon, berries and cream

OKLAHOMA CITY – Mother’s Day is a perfect time to honor Mom with a decadent, easy breakfast.

This simple but impressive recipe is perfect for kids or teens to prepare – requiring very little adult supervision.

Bacon: (may be prepared in advance)
Preheat oven to 400 degrees. Using a non-stick cookie sheet or sheetpan lined with foil, arrange slices of bacon. Bake for 16-20 minutes. Remove from oven and allow to “crisp”

Chantilly Cream:

Combine 1 cup of chilled heavy whipping cream, 2 tbsp of powdered sugar and 1/2 tsp of real vanilla extract. Whisk the cream in a stainless steel bowl until soft peaks form.

May also purchase aerosol whipped cream – just be sure it is real cream.

Waffles:

Lightly spray waffle iron with cooking spray and pre-heat. Using favorite boxed brownie mix, follow directions on package to make batter – add one extra egg to batter.

Pour 1.5 C batter into iron and cook.

Berries:

Purchase, wash and slice Mom’s favorite berries.

Chocolate Syrup:

Be sure to pre-chill syrup such as Hershey’s – may also use warm caramel or hot fudge, which may be warmed in microwave.

Assembly:

Place one waffle on a plate. Add cream over top, then place berries and bacon on cream. Add second waffle on top of cream/bacon/berries and repeat process. Drizzle with desired syrup, fudge or caramel.
