It’s all in the sauce: Perfect horseradish cream and Kyle’s secret ham glaze

Holiday meals and special occasions often call for roast beef or ham. Here are sauces that perfectly compliment each. (And Kyle has added a tip that makes the Holiday Ham a breeze!)

Roast beefPerfect Horseradish Cream for Beef:
8oz (1 C) Sour Cream
Scant 1 C (6-7oz) Mayonnaise
1 T fresh lemon juice
1 T Worcestershire
8oz Fresh Ground Prepared Horseradish (found in refrigerated section of grocery store; do not purchase a pre-prepared sauce from condiment aisle)
Fold together ingredients and chill. Keeps for 7-10 days

HamHam Glaze:
1 12 oz can Coke
1 Cup brown sugar
1 8oz can crushed pineapple, drained
1 t ground cinnamon
1/2 t ground clove

In saucepan, whisk coke and brown sugar together. Bring to simmer – will resemble a syrup. Stir in crushed pineapple and simmer for a minute or two. Remove from heat and stir in cinnamon and clove. Set aside. Spoon over ham before placing in oven and during last 30 minutes of cooking.

(Hint: purchase a pre-cooked, pre-sliced ham. Remember that all you are doing is re-heating the ham. Before placing in oven, ooze the sauce between the slices. Just before serving, ooze a bit more over the ham, and serve the remaining sauce to the side).
